Raw Cranberry Sauce 

 

Serves 6-8

2 c fresh cranberries, ground
1 orange (washed to remove any residues) chop very fine including at least one half of the rind.
2 ripe pears, peeled and chopped fine
1/2 c. walnuts or pecans, chopped into pieces
4 celery ribs (stalks), chopped fine
1/2 c. organic raisins or dates (pit and chop dates if using)
1/2-1 tsp. cinnamon or pumpkin pie spice
1/4 tsp. each of ginger and allspice
1/2 c. raw, unfiltered honey or other sweetener (stevia)

Grind berries, chop fruit, mince nuts, chop celery and dates if using. Place all ingredients in a bowl and mix well.
Cover and place in the refrigerator until ready to serve. Serve on a bed of leaf lettuce.

Option: leave cranberries whole and place in a saucepan with all remaining ingredients. Turn burner to low and simmer until thickened, stirring occasionally.
